I recently went to a spinning class for triathletes. Unlike other spinning classes where the instructors make it interesting by pretending to climb hills or doing intervals standing on the pedals we did the following in our 1 hour class. 30 minutes of it, after warmup, was taken up by pedaling at a steady 80 rpm - the instructor had a metronome - and breathing through our noses - so the resistance was pretty low. This helps build muscle and endurance. It was really, really boring. But the next day my outdoor biking speeds were up and I revved faster.
Other ideas are watch TV - Larry King is especially good for keeping me going on the exercise bike.
Our gym has Expresso bikes - you can play a game chasing dragons which I love - just wish they had more games.

I should have said, I am talking about 'at home, in bedroom' exercise bike riding... so no tv, no fancy Expresso bikes... just an ol' fashioned exercise bike and a choice between a radio or ipod for entertainment.
I tried my first ever spinning class a few days ago. It was also a little dull, but a fantastic workout... but not as convenient as popping upstairs.
If the snow and ice ever goes, I'll let you know if my outdoor bike speeds are better. They jolly well ought to be, just for enduring these boredom levels.
